From Guangxi to Taiwan: The Taste Buds of Cross-StraitFriendship
Laibin, Guangxi, August 25, 2024 – The aroma of simmering spices and the comforting warmth of a steaming bowl of luosifen (a spicy fermented rice noodlesoup) are not just culinary delights in Guangxi, but also a symbol of growing cross-strait cultural exchange.
This week, a group ofTaiwanese youth embarked on a culinary journey in Laibin, Guangxi, the birthplace of luosifen, to learn the art of crafting this beloved dish. The 2024 Taiwan Youth Luosifen Cooking Training Program, organized by the Guangxi-Taiwan Economic and Cultural Exchange Association, brought together aspiring chefs from Taiwan, eager to master the secrets of this unique Guangxi delicacy.
Among the participants was Zhang Guowei, a Taiwanese entrepreneur from Taoyuan City, who owns a Yunnan rice noodle shop. Zhang, whose family hails from Yunnan, was particularly interested in the intricacies of luosifen preparation. I’m also in the food business, but there are certain details that I haven’t mastered as well as the instructors here, he said. For example, they use a unique method to deodorize the ingredients to make the luosifen broth more flavorful. This innovative approach is worth learning, and I plan to implement it in my own cooking back home.
The training program emphasized the importance of meticulous attention to detail, from selecting theright ingredients to mastering the precise timing and proportions of the broth’s simmering process. Gan Lin, a training instructor from Laibin’s Huizhi Vocational Training School, stressed the significance of precision in creating authentic luosifen. The soul of luosifen lies in its broth, heexplained. The key is to choose the right ingredients and use the correct proportions of seasonings. We provide a precise recipe, specifying the weight of each seasoning, and the students just need to follow the process, control the details, and they can make delicious luosifen.
Zhang Guowei’sson, Zhang Qiankai, also participated in the training, hoping to gain valuable skills and deepen his understanding of mainland Chinese cuisine. I hope to go back and make luosifen for my sister and mother, he said simply.
This year’s training program marks the second time Taiwanese youth have traveledto Laibin to learn luosifen cooking. The first program, held in October 2023, focused on Cross-Strait Skills Exchange and Taiwanese Youth Building Dreams in Guangxi. Participants from that program have since opened luosifen shops in various cities across Taiwan, includingTaipei, Changhua, Kaohsiung, Hualien, Tainan, and Kinmen, transforming from students into successful entrepreneurs.
Lu Tingyu, president of the Taiwan Asia-Pacific Youth Entrepreneurship and Economic Development Association, who organized both training programs, expressed her enthusiasm for fostering cross-strait culturalexchange through food. Guangxi has a rich variety of rice noodles, each with its unique flavor, she said. Besides luosifen, there’s Guilin rice noodles, Nanning Lao You Fen, and many others. I plan to bring more Taiwanese youth to Guangxi to learn these culinary skills.
The Taste Buds of cross-strait friendship are evident in the shared passion for food and the dedication to preserving and promoting culinary traditions. Through these training programs, luosifen has become more than just a dish; it has become a bridge connecting people across the Taiwan Strait, fostering understanding andcultural exchange one delicious bowl at a time.
